Thanksgiving planning is upon us! This is a simple, delicious family appetizer recipe for Bacon Roll-Ups, always requested and devoured before I know it.
When choosing bacon, local is always best. If you cannot find a local source, buy pasture-raised pork with ingredients you know for the healthiest option. 

 

Makes 42 pieces

Ingredients:
-1 loaf of Dave’s Killer Bread (or your favorite sliced bread)
-14 slices bacon, cut in thirds
-16 oz. Philadelphia cream cheese
-4-5 scallions, sliced
-2-3 jalapeños, diced

-salt to taste
-42 toothpicks

Preparation:

  1. Combine cream cheese, scallions, and jalapeños in a stand mixer or by hand. Season to taste.
  2. Cut the crusts off the bread. Roll each piece flat with a rolling pin.
  3. Gently spread a heaping tablespoon of the cream cheese mixture evenly on a slice of flattened bread. 
  4. Lay 3 slices of bacon vertically, parallel to each other. Lay the bread on top with the cream cheese facing up. Roll the bacon slices around the bread while rolling it into a circle. Place one toothpick per slice of bacon, then slice between the pieces of bacon. 
  5. Lay the individual pieces on their side on a parchment-lined baking sheet. Repeat until all bacon is used. This is the make-ahead point at which you will wrap and refrigerate until party time or continue to step 6.
  6. In a 375-degree oven, cook for 15-20 minutes. Flip and cook 15-20 minutes more until the bacon is crisp. Remove from pan to a paper towel lined plate before putting them on a platter. If making gravy, save the bacon drippings to add to your gravy.
