The Perfect White Chocolate Cheesecake

Recently, I developed the perfect white chocolate cheesecake recipe for my dear friend’s birthday. It was then requested over and over again by those who tried it.

This would be the ultimate dessert to bring to your holiday gatherings. Just be careful, as you will be requested to make it every time you are invited somewhere!

Here is the whole recipe’s ingredient list and the method for the perfect crust. Head to for the full cheesecake recipe!

24-26 Newman’s Own Organic Sandwich Cookies
1/4 cup grass-fed butter, melted

Raspberry Sauce:
12 oz. organic raspberries, fresh or frozen
1/3 cup water
2T organic sugar
1T organic cornstarch

1/3 cup organic heavy cream
1-1/2 cups white chocolate chips
2lbs. cream cheese, room temperature
3/4-1 cup organic sugar
1T organic cornstarch
1/8t pink Himalayan salt
1/3 cup sour cream, room temperature
3 pasture raised whole eggs
1 egg yolk
2t vanilla extract

Extra white chocolate as shavings or chopped up chips for decoration.

For the crust: Preheat oven to 350 degrees. In a food processor, pulse the cookies until they are crumbs. Pour the butter in the top while the food processor is on to combine. Press the cookie mixture into the bottom of the pan and around about halfway up the sides. You can do this with your hands. If you feel you cannot spread it evenly, use a flat-bottomed cup covered with parchment or wax paper to flatten it without the mixture sticking to the cup. Bake for 8 minutes.

I hope you try the whole recipe. It’s a showstopper and well worth the effort! While it takes more time than other desserts, when you make it yourself, you can control the quality of the ingredients and save money in comparison to buying a cake!

Merry Christmas to you and yours!
